From the label“Metamorphoses is our spontaneously fermented golden ale aged in oak barrels with both elderflower and elderberry. In the spring we harvest the elderflower, adding the hand-destemmed local NJ blossoms to the barrel for a brief maceration in 1.5-year-old beer. Then, in the summer, the flowers we left unpicked bear their fruit (:the elderberry!), which we add directly to the aromatized beer in oak for refermentation.
