UN CHIEN ANDALOU was brewed in October of 2016 with pilsner malt grown in NJ and malted in PA, raw wheat, and five-year-old aged Sterling hops. Following a five hour boil and fifteen hours overnight in the coolship, the wort was racked to Oloroso sherry butts where it spontaneously fermented and aged for twenty-eight months prior to blending with NJ wildflower honey for refermentation in the bottle.
