From the label“is our spontaneous impression of the monolith of saison, refermented with NJ white peaches. This blend is composed of fifteen-month-old saison brewed with NJ rye and hand-harvested spelt, aged in Rosé and Pinot Noir barrels before refermentation with quartered fresh white peaches for an additional six weeks in stainless steel.
