From the label“Old Ale aged in oak for 12 months then conditioned with Brett. Bruxelles and Claussenii with secondary fermentation on medjool dates, golden raisins and figs for 12 months. Wild & Sour Program: Well balanced blends of cultures and microorganisms create flavors unlike any other. Our love for tart, funky, dry and flavorful beers drives our creativity as we draw inspiration from tradition. Many of our wild & sour beers spend months aging in barrels until their flavors reach excellence. Time, patience and attention are key to capturing this living liquid at its prime.”
