More SourAbout this beer
This is the 2nd of 2 labels we have from Holy Mountain Brewing Company. It is one of 78 wild / brett / lambic-style labels approved in October 2019. Its label was approved 16 days after it was submitted. The label carries barrel-aged, fruited on the front.
From the label“New Jerusalem is a blend of oak aged, mixed fermentation beers. After blending, it was racked on top of an enormous amount of Robada apricots grown by our friends at Gilbert Orchards in Yakima, WA. It then went through a secondary fermentation on the stone fruit in a variety of Washington wine barrels. Refermented in the bottle with Brettanomyces.”
