This year's batch of Symphonic takes a walk down memory lane. This beer was fermented in stainless steel this year and aged in barrels with brettanomyces and the souring bacteria, lactobacillus. Hundreds of pounds of whole blackberries and raspberries were added to this beer to complete its fermentation. It's just like jelly but it doesn't wiggle. It splashes.
