About this beer
This is the 7th of 19 labels we have from Sante Adarius & Side Project. It is one of 40 wild / brett / lambic-style labels approved in November 2019. Its label was approved 11 days after it was submitted. The label carries barrel-aged on the front.
From the label“Sunsets is a collaboration with our friend Tim Clifford of Sante Adairius Rustic Ales. We brewed a lager and then experimented as we did as homebrewers with a precise matrix of Brettanomyces strains as we aged the beer in French Oak Puncheons. After 20 months in oak, we wove in 18% of Oude Fermier to lean this lager / ale hybrid toward our individual Saison profiles. Sunsets was bottle and keg conditioned for 8 months with cultures from both breweries before sharing with you.”
