From the label“Sunsets is a collaboration with our friend Tim Clifford of Sante Adairius Rustic Ales. We brewed a lager and then experimented as we did as homebrewers with a precise matrix of Brettanomyces strains as we aged the beer in French Oak Puncheons. After 20 months in oak, we wove in 18% of Oude Fermier to lean this lager / ale hybrid toward our individual Saison profiles. Sunsets was bottle and keg conditioned for 8 months with cultures from both breweries before sharing with you.”
