We think Saison is more of a concept than a style. For the first Saison of this series, we co-pitched a German Lager yeast and a Belgian Saison yeast. After two weeks, we pitched Brett Bouckaertii, and two weeks after that we rested the beer on Sauv Blanc Must for another couple months.
