Freeport Pilot Brew #08. Pouring a beautiful golden hue with a light body and a subtle tart edge, we brewed this wheat beer with 100% Blue Ox Malthouse grain: pale malt, wheat, and triticale. The grain bill lends a soft, lightly bready backbone, balanced by a restrained addition of American hops in the boil. We made a sumac tincture from our own harvested sumac and added it cold-side to retain its bright, citrusy character. Light, refreshing, and just tart enough to keep things and interesting.
