In their words
This beer, named Beast, for the devil, is very traditional, and most akin commercially to Duvel--Devil. Very beautiful pear and mango on the nose, a slight bubblegummy thing in the mouth, but a bone dry finish keeps this 7.9abv beast in check. This is a very nice Belgian Golden Strong Ale. I'm drinking it as I write this and I honestly can't say enough good about it... but I am obviously quite biased. As I said, most akin in style to Duvel. The most obvious difference, however, is that Duvel and many other Belgian brewers bottle condition their beer. This means that in order to acquire carbonation, they add yeast and sugar to the individual bottles, which undergo a secondary fermentation that creates the bubbles. This process yields a wildly effervescent beer. Because Beast of Zion is not bottle conditioned, and because it is so dry (lacking residual proteins and sugars) it quickly appears to be less carbonated than some of our other beers. However, I assure you the carbonation level is adequate and will evoke the proper amount of burps.
