Jack's Grisette draws inspiration from historical grisettes, a sister style to saison which originated in the Belgian/French border region of Hainaut. It was brewed with both malted and unmalted wheat as well as Admiral Maltings pilsner malt before spending 13 months in wine barrels with Brettanomyces and Lactobacillus.
