We brew our Spelt Saison with a combination of imported Barley, Spelt, and Rye alongside lots of noble hops. We fermented with a blend of two yeast strains to lend notes of exotic fruit and spice while keeping things dry and refreshing. To further enhance the tropical and citrus notes of this beer, we refermented with a Hawaiian varietal of yellow passion fruit before bottle conditioning with several strains of Brettanomyces. This effervescent, complex beer will evolve with age. Enjoy the journey and drink within five years of bottling date.
