In their words
This saison was spontaneously, open top fermented in oak on Marsanne grape must. It then mellowed in Chardonnay barrels for twelve months before being bottle conditioned with Brettanomyces. It's a beautiful balance of robust, bone dry saison character and funky, light fruit white wine. It's deeply complex, effervescent and our double down on a dying breed of beers.
