From the label

Inspired by the thoughtful cellaring of fine wine, this Vienna style saison was aged in oak barrels for 28 months and refermented on whole blackberries. Ouillage, a name borrowed from French winemakers, alludes to the headspace left inside a barrel after evaporation. This concentration of flavor leaves behind a saturated tannic structure and a smooth, oaky finish. A testament to having the right headspace, from beer to brewer to cellarian, enjoy Ouillage with an open mind.
