From the label“We like Saisons and Witbiers, they're better together. 'Style' is a dirty word in Belgium and as you may have guessed can be around our brewery, as well. Saisons, traditionally, are fermented to dry tartness and liberally hopped (for a Belgian style, anyway). Witbiers are slightly sweeter, usually spiced and always pretty light in color. Why compromise? Hoppy for a witbier, possibly? Offbeat for a saison, for sure? Our unique contribution: Triticale, a relatively modern hybrid of wheat and rye. Tradition gets the Deep Ellum treatment.”
